Elizabeth "Liz" Nix is a registered dietitian nutritionist and associate professor of Nutrition in the Department of Health and Human Kinetics, where she collaborated in the development of programs for Nutrition and Public Health. Dr. Nix teaches courses in introductory nutrition, food transformation, food systems, and advanced human nutrition and metabolism course. Her research interests include health behavior changes and biomarkers of behavior change, such as skin carotenoids, a biomarker for fruit and vegetable intake. Dr. Nix's further interests are in the social and systemic influences of health, and particularly nutrition. Her interest in the food system and the role it plays in human health has led her to study systemic factors of diet across the world including Italy, Spain, and most recently, Cuba.
